Carrot Halwa

 Ingrediants:

  1. 1/2 kg orange carrots
  2. 2 glasses of milk
  3. 200 gms sugar
  4. Elachi powder (cardomon)
  5. saffron few flakes
  6. few drops orange colour (optional)
  7. 8 table spoons of ghee.
Method:
  1. Peel, wash and grate carrots
  2. Heat 6 spoons of ghee in a thick bottom frying pan and add carrot to it and fry
  3. After frying carrot deeply (stir continuously so that bottom is not burnt)
  4. Add milk to it and Boil till thick, stirring occassionally. Once it starts thickening, stir continuously
  5. Add sugar and cook further till thickens
  6. Add elaichi, saffron and colour
  7. Heat remaining ghee in separate pan add cachew, dry grapes fry till golden brown
  8. Add this to prepared carrot Stir on low heat till the mixture collects in a soft ball
  9. Serve hot
