Egg Bhaji
Ingredients
  • Eggs 4
  • 1 inch pieceGinger
  • 4 clovesGarlic
  • 2 medium Onions
  • 2 Tomatoes
  • Fresh Coriander Leaves a few sprigs
  • 5 Cloves
  • 8 Peppercorns
  • Oil 2 tbsps
  • Red Chilli Powder 1 tsp
  • Salt to taste
  • Lemon Juice 2 tbsps
Procedure
  1. Boil the eggs. Drain and cool. Shell and chop the eggs.
  2. Grind garlic and ginger with cloves and peppercorns to a fine paste.
  3. Heat oil, add the onion slices and sauté till brown.
  4. Add chopped tomatoes, ground masala, red chilli powder and salt. Stir and add the chopped eggs. After five minutes, stir lightly.
  5. Serve hot garnished with tomato slices, lemon juice and chopped coriander leaves.
